One fact you can take to the bank is not all Panko Brands are the same. Because not all brands of Panko are Authentic Japanese Panko. While there are many commercial brands available, only a few are truly an authentic Japanese Panko. The word “Authentic” is important.
An Authentic Panko is made using traditional Japanese methods which starts by carefully blending dough consisting of a very short list of high-quality ingredients (flour, sugar, yeast, salt), and is then allowed to rise several times until it achieves the right texture and strength.
Creating a light and delicate flaky Authentic Panko takes time and can never be rushed. Each loaf is baked in a specially designed oven, which uses electric current instead of heat, creating a crustless loaf of bread with millions of tiny little air pockets. The bread is then carefully staled and ground creating light and delicate, sliver shaped breadcrumbs.
An Authentic Panko is light with a delicate texture, adding just the right crispy note to your dish and is the farthest thing from a hard, dense coating. If you’ve experienced the latter, chances are it was one of the many standard commercial Panko brands. Standard Panko products have the potential to make food taste oily with a hard and dense texture. In addition to the noticeable visual differences, a true Japanese Panko will have a simple, clean, non-GMO ingredient list, ideal for any dish – including plant-based and vegan menus as well.
Strictly keeping to traditional Japanese methods and taking the time to do it right, each and every time, is what makes our Panko authentic. Please take a minute and view our video Panko Bread Crumbs Secrets Revealed and watch how our traditional Japanese Panko is made.
Life is Hard Your Panko Shouldn’t Be
Knowing how to spot the difference between an Authentic and a Standard Panko will make a huge difference in the outcome of your menu items – Guaranteed!
An Authentic Panko is easily be identifiable by its unique shape and delicate texture and will have a very light airy texture with a flaky sliver shaped crumb. Compare it to a standard panko which can be hard and have a round dense crumb.
The delicate shape of the crumb is important, the flaky sliver shape is what allows the crumb to provide more highlights and makes the coated food item look bigger, without adding an overly breaded taste.
The light airy texture is a result of the many tiny air pockets in each crumb. It’s these tiny air pockets that create the light, delicate and crispy crumb. The hot oil is distributed more evenly during frying, and then releases it when removed from the fryer, providing a less greasy look and taste and allows fried foods to stay crispy longer.
